Foodie Penpal Take 1!

This is my first post for the Foodie Penpal Exchange, hosted by the lovely Lindsay at the Lean Green Bean (To learn more about the Foodie Penpal Program visit http://www.theleangreenbean.com/)

This month Pam at http://themeltaways.com, sent me an AWESOME package of goodness.

The first thing I noticed was this delicious jar of Peanut Butter and Co. Peanut Butter. Yummm! I love PB! I did a happy dance to the embarassment of my husband. Look at all the pretty purple paper, how did she know I love purple?

Here is the lineup: Peanut Butter & Company, White Chocolate Wonderful (dipped a PB Finger into this baby right away!) Dry Roasted Edamame, which is delcious on it's own or on a salad. Almonds, which has been a very handy work snack for me, and last but not least Caffine! Two sample packs that I've enjoyed as my morning cup of joe!

As you can see I've given this box the thumbs up (don't mind the chipped nail polish). I've been quite busy, with work and all. I'm hoping to have a break sometime this summer!!

Again, a big thank you to Pam!

My Easter Feast

Happy Easter Everyone!

Adam and I went to his parents for easter lunch, and I had every intention of being "good." I started off with a bowl of Fiber one for breakfast, so that I would be less likely to stuff myself. Well that logic, went right out the window.

His Mom made my favorite salad "winter salad" which has apples, cashews, spinach, romaine mix, dried cranberries, parmesan cheese, and a nice sweet dressing with poppy seeds. I had two medium sized bowls of this.

His Dad grilled fillet mignon's, which are realtively healthy, given the portion size they were. I had one, with around 1/2 c of mashed potatoes, and a good helping of broccoli and cauliflower. Only if I had stopped there, I guess I wouldn't feel so stuffed....

I made scotcharoo's last night, as I LOVE everything and anything peanut butter. I'm not sure how I restrained myself from not digging into the whole pan! At lunch, I had a nice size scotcharoo, along with a chocolate buttercream iced cupcake (and yes I savored and ate all the icing too).

I have every intention of going to they gym tonight as planned, and working off a portion of my Easter lunch with a nice 45 minute run on the treadmill and 15 minutes on the elliptical.

Every now and then, there are going to be days where I won't eat as healthy as planned. As long as I pick up my healthy habits the next day and continue with my work-outs, there isn't a big reason to sweat it. Now, if I didn't this every week or several times a month, that would not be good.

Life is about balance, and you can't deprive yourself of the things you enjoy, as that's not realistic to live the rest of your life. I'm trying to be good 80% of the time, and the other 20% I'll induldge.

In 2009 I weighed my heaviest at 190 lbs. Today I'm at 125 lbs, sure I'd like to get to 120 lbs, but I'm comfortable with maintaining the weight I'm currently at. If I gain 2 pounds so be it, there are a lot of factors to gaining 1-5 pounds at any given time. As long as I can reasonably keep that figure below 130, I'm cool....

My point is, don't sweat it if you messed up your "diet" during the holidays. Pick up the next day and continue with your healthy habits. Don't give up because you had a "bad day", we're all human, and with enough determination and effort, you will get there :)

My Attempt at WIAW

This is my first attempt at a "What I ate Wednesday" post without the pics. It didn't work out too well, as I only took pictures of two things I ate throughout the whole day.

I'm impatient when it comes to having a hungry ravenous tummy and taking photos was an afterthought :)

Breakfast: (Not Pictured) Bowl of Oatfit, with 1/2 Tsp Chia, and 1/2 Banana and added Almond Milk.

Lunch: Buffalo Turkey Spinach Wrap

Snack: (Not Pictured) Grandma Ginna's Mocha Creamice (pronounce creme meese) so good and so worth the extra 470 calories ha!

Dinner: (Not Pictured) Tomato Pesto Bread made into a grilled cheese panini with spinach and 1 Honey Crisp Apple

Snack: (Not Pictured) Bowl of Pumpkin Oatmeal Topped with Raisin Cinnamon Peanut Butter

As you can tell I LOVE Oatmeal!

I worked off the Mocha Creamice with a 1 hour long training session at the gym. We did circuits of the following.

10 minute warm-up on the elliptical
3 sets of 12 lunges
3 sets of 14 chest presses
3 sets of 14 bench presses
3 sets of jump squats
3 sets of low and high intervals on the elliptical each 3 minutes
6 minutes of rope exercises
6 minutes of lower body
10 minutes core

My arms hurt like "you know what" today. I'm already looking forward to my Friday morning workout. Honestly I am :)

Hello

So, I tried the blog thing a few years back, and quite frankly I made two postings and that was it. I'm hoping to make a fresh start by taking my interests in food, fashion, and fitness, and turning them into fun blog excerpts.

So here goes day 1! I won't be able to post daily, but I will blog regulary (hoping 2-3 times a week). :)
